Cut garlic into small cubes. In a frying pan, heat olive oil and lard, sauté onion and peppers. Add the garlic and ham and sauté. Later add the tomatoes and simmer the sauce for about 45 minutes. Cook the macaroni in boiling salted water for about 8 minutes. Pluck and chop basil and parsley. Crush peppercorns in a mortar. Fish the peppers out of the sauce. Season sauce with cheese, pepper, herbs and salt, mix well with cooked pasta.

Arrange Maccheroni alla calabrese on plates.
