Instructions:

For the mango muffins, coat the muffin tins with Kronenöl Spezial with fine butter flavor and dust with flour. Preheat oven to 180 °C (top and bottom heat).

Peel mango and cut into approx. 1 cm cubes. Sift flour and baking powder. Beat eggs with fork, add powdered sugar, milk and Kronenöl Spezial with fine butter flavor and stir until smooth. Mix in flour mixture, mango and the grated pistachios.

Pour the mixture into the muffin tins until approx. 4 mm below the edge and bake on the middle shelf for approx. 25 minutes. Remove the mango muffins from the oven, let cool for 10 minutes, turn out and sprinkle with powdered sugar if desired.
