Rinse goose breast fillet and rub dry. Score skin crosswise with a sharp kitchen knife. Remove peel from ginger and garlic. Remove seeds from chili pepper. Chop ginger, garlic and chili pepper very finely. Stir a marinade from ginger, garlic, orange juice, lime juice, chili pieces, honey and soy sauce.

Peel and seed the pumpkin, dice the flesh. Rinse sugar snap peas, drain. Heat oil in a frying pan. Fry goose breast for 10 minutes on all sides, remove. Sauté pumpkin pieces in it. Add sugar snap peas.

Place goose breast skin side up in a roasting pan and season lightly with salt. Place vegetables around poultry. Pour marinade over vegetables and meat. Pour poultry stock over it. Continue roasting in heated oven at 200 °C for about 15 to 20 min. Remove goose breast, cut into thin slices.

Arrange on four plates with vegetables and sauce from the roaster. Serve with crispy fried potato patties.
