For the orange asparagus, first peel the asparagus. Grate orange peel and squeeze oranges.
Place 4 asparagus pieces, half of the orange zest and juice, 1 tablespoon butter in one of two vacuum bags and seal tightly.
Cook the bags at 85° for 30 minutes. Salt the orange asparagus and serve garnished with crushed peppercorns.

If desired, you can serve the orange asparagus with grilled meat or alongside rice.
