Leipziger Allerlei is the most famous vegetable dish from the Leipzig area. According to a classic recipe, it includes various young vegetables, crab tails, morels and bread dumplings.

All kinds of vegetables are cooked separately – asparagus in lightly salted water, carrots in beef broth, peas in a little water with butter, kohlrabi and cauliflower in lightly salted water. Put the extensively cleaned and washed morels in cold water, get hot so that the sand is released from the wrinkled parts. Rinse the morels repeatedly in cold water, then cook until done. Remove the cooked vegetables from the broth and arrange in a baking dish. Evenly distribute the shrimp cooked in water with salt and a little vinegar between them. Melt butter, add a little vegetable soup, bind with beaten egg yolk and pour over the vegetables. Finally, garnish with cooked morels and small bread dumplings.

Bread dumplings: pour boiling milk over crushed bread, add egg, salt and nutmeg. Cut dumplings from the dough, put them into boiling salted water and cook on low heat.
