The egg whites are beaten with the sugar to a particularly stiff snow and half of it is spread into an ovenproof mold. This mixture is then baked in the oven at 180° C until a light yellow, but not too brown crust is formed. The ice cream is quickly draped over the crust, covered with the second half of the egg whites and dusted with sugar. Then put the dish back into the oven and bake on high heat until the crust is light yellow. Before serving, the baked ice cream is decorated with pickled fruit.
