Instructions:

Prepare: give spread with parchment paper.

Prepare: All ingredients up to and including baking soda in a frying pan just warm, stir well, pull frying pan from plate, cool slightly. Add orange and lemon zest and spices, cool. Sift in flour, stir until smooth, pour into prepared pan. Sprinkle with hail sugar.

Bake: 50-55 min in the lower half of the oven heated to 180 degrees.

Storage: loose for 2-3 days, then wrap tightly in foil. Pain d’epice will keep in the refrigerator for up to 2 weeks.

Note: baking soda is available at drugstores and larger grocery stores. It leaves a slight odor in the pastry, but it disappears after 2-3 days.

Tip: Twice the amount of dough is enough for a cake pan (quiche pan) of 30 cm. The baking time is extended to about 70 min.

Tip: Stock up on a range of high-quality spices – it pays off!
