For the tomato soup, first dice the onion and sauté in a pot with very little oil. Cut the tomatoes into quarters, remove the stalk and add to the onions in the pot.

Break off the dried bay leaf in the middle and add both halves. Now let everything sweat a bit and then fill up with the water. Season with salt and pepper and bring to the boil once.

Now lower the heat so that the soup simmers until the tomatoes are soft. Add the sugar, paprika powder, tomato paste, a dash of white wine and stir.

Now remove the two bay leaf halves from the soup pot, stir in the sour cream and puree with a hand blender to a soup.

It is best to let the soup simmer for a while and then, shortly before serving, blend again with a hand blender, season and serve.

The tomato soup is especially delicious if you refine it with fresh, finely chopped herbs.
