Cut the meat and bacon into small pieces, mix in a baking dish with the diced shallots, orange zest, peppercorns, herbs, salt and cognac and marinate for 24 hours.

Remove the culinary herbs from the meat and keep the bay leaves.

Chop the meat unevenly but relatively small in a food processor and place in a suitable bowl. The liver in the machine form, finely grind and mix with egg into the meat.

Place bay leaves in the bottom of small terrine moulds. Pour the mixture on top and spread smoothly. Cover the ramekins with aluminum foil. Cook in a hot water bath in a heated stove at 150 °C (convection oven not recommended) for 45 min.

Serve the pies with the chutney. Serve with a side salad.
