For the pork medallions, peel and finely chop the onion. Mix with Calvados, mustard, apple juice, broth and pepper. Wash medallions, pat dry, add to marinade, cover and let marinate in refrigerator for 3 hours.

Clean mushrooms, quarter larger ones. Wash apples, cut in half, core and cut flesh into wedges. Place both in an unperforated steamer basket.

Remove medallions from marinade, drain well and sear briefly on both sides in 2 portions in hot clarified butter. In the meantime, mix marinade with cream, salt and pour over mushrooms and apple slices. Place medallions on top, pour gravy over them and grind pepper over them. Then cook (at 100°C for 10-12 minutes).

Pour sauce into a small saucepan, place medallions and mushroom-apple-vegetables briefly in warmer. Bring sauce to a boil, thicken slightly with sauce thickener and season to taste. Serve with medallions, mushroom-apple vegetables and parsley. You can serve gnocchi with this.
