For the potato soup with pears, peel the potatoes and cut into cubes.

Peel the pears, quarter them, remove the core and dice them as well.

In a large pot, bring the vegetable soup to a boil, add the pears, potatoes and bay leaf and cook over low heat until tender.

Peel ginger and grate finely on vegetable grater.

Wash parsley, shake dry and chop leaves finely.

Remove the bay leaf and puree the soup with a hand blender. Add the crème fraîche. Season to taste with salt and pepper.

Stir in the ginger and serve the potato soup with pears sprinkled with parsley.
