For the potato-walnut bread, mix the flours together in a bowl and make a well in the center. Crumble the diced barley, add it with sugar to the well and pour lukewarm water over it and mix. Leave to rise in a warm place for about 10 minutes.

Grate the potatoes and add them together with the remaining water, salt, bread spices and knead everything well. Cover the dough and let it rise in a warm place for 45 minutes. Add the walnuts and knead everything well again.

Line a baking pan with baking paper, put the dough in, cover and let it rise again for 45 minutes. Meanwhile, preheat the oven to 200 °C and bake the potato-walnut bread for about 40 minutes until golden brown. Then let cool slightly in the pan, turn out onto a cooling rack and let cool uncovered.
