Dry roast pumpkin seeds and chill. Mix lukewarm water with yeast, flour, salt, pepper, sesame seeds and coriander. Add pumpkin seeds and oil to the base mixture and knead well. Let the dough rise 2 – 3 times and then form into a roll on a floured work surface. Leave to rise in a loaf pan for approx. 30 minutes. In the meantime, preheat the oven to 220 °C and bake the bread for about 10 minutes. Then bake the bread at a lower heat (160 °C) for another 15 – 20 minutes.
