For the quail egg toast, toast a slice of toast or alternatively a slice of brown bread in the toaster or in a coated pan.
Fry the quail eggs in a coated pan with a drizzle of olive oil to make fried eggs. Then season with salt and pepper.
Sauté the ham and scallions a bit as well, or use raw if desired.
Top the toast with ham, fried egg and fresh herbs and serve the quail egg toast.
