Rice noodles with carrots and broccoli Pad Siu

Preparation approx. 30-35 min.

Bring water to a boil in a saucepan and gently toss the noodles in about ten minutes. Now rinse the noodles with cold water and drain. Clean broccoli, chop and blanch in a saucepan with a tiny bit of salted water for three min. Drain the salted water and set broccoli aside. Remove skin from carrots and cut into slices. Chop garlic. In a frying pan or possibly wok, heat oil and sauté carrots until translucent. Now add the broccoli and the noodles. Stir-fry all ingredients. Mix a marinade of egg, corn starch, garlic, oyster sauce, sugar, fish sauce and sesame oil and pour over the noodles. Season everything with sweet soy sauce.

Tip: If necessary, season with fish sauce and sugar.
