For the Riz Rouge with shrimp and broccoli cream, first boil the Riz Rouge in lightly salted water for about 18 minutes.

Meanwhile, cook the broccoli in salted water until done. Blend the broccoli, pinch of salt, pepper and 2 tablespoons of milk together and set the cream aside.

Heat 1 tablespoon of olive oil in a pan, add the shallot and rosemary sprig and sauté until translucent. Add the wine, let it evaporate and season with salt and pepper. Add shrimp and simmer everything with about ½ cup of water for about 5 minutes. Always make sure there is enough liquid in the pot.
