For the roasted radicchio, first clean the radicchio, remove the outer leaves and quarter lengthwise. Cut out the stalks. Cut the onions into eighths and finely chop the garlic cloves.

Heat half the oil in the pan and sauté the garlic. Add the pine nuts and onions and fry, stirring constantly, for about 3 minutes. Add the washed, well drained radicchio and fry over low heat for about 5 minutes. Season the fried radicchio with salt, pepper and the remaining olive oil.

If you also fry 100 g of streaky bacon cut into fine strips with the onions and garlic, the dish is no longer vegetarian, but gains considerably in flavor.

This dish is particularly good with the elongated radicchio di Treviso, which is available mainly in winter and whose flavor comes mainly from the peeled roots.

Roasted radicchio tastes excellent as a small snack, but it also goes well as a side dish with roasted fish or meat.
