Instructions:

For the Sacher Torte, separate the eggs, beat the egg whites with granulated sugar until stiff. Mix soft butter, powdered sugar and yolks until creamy. Melt the chocolate and mix well.

Mix in flour and baking powder as well. Carefully fold in the beaten egg whites, pour the batter into a greased springform pan and bake at 170 °C top/bottom heat for about 1 hour.

Leave the oven door ajar for the first 15 minutes (put a wooden spoon in between).

After baking, turn out the cake with the pan onto a rack and let it cool for 20 minutes. Then invert and remove from the pan.

For the chocolate glaze, melt the butter with cooking chocolate. Cut the cake 1x in half, spread with jam. Spread the top with jam as well and cover with chocolate glaze.

Allow the glaze to set on the Sacher Torte.
