For the Chocolate Fudge Cookies, preheat oven to 180 °C. Toast pecans or walnuts for 8 – 10 minutes and then coarsely chop. Sift together flour, baking powder, salt and coffee powder. Melt chocolate and butter. Mix eggs and sugar for 5 minutes. First mix the melted liquid mixture with the vanilla extract. Finally, fold in the sifted remaining ingredients and the Chocolate Chips. Leave to set in the fridge for a while.

Heat oven again to 180 degrees, and place (larger) round blobs on a baking sheet lined with parchment paper. Bake for 10 minutes, remove from the tray and leave to cool.

Preparation Tip:

It is very important not to bake the Chocolate Fudge Cookies too long, otherwise they will be dry! Good luck!
