Strain the potatoes and quickly mix with the other ingredients to form a dough. Allow to rest a little. Form the dough into a roll, cut small pieces with a dough card and shape into Schupfnudeln. Boil the Schupfnudeln in plenty of salted water for 3 – 4 minutes, rinse and fry in a little butter.
