Instructions:

For the seasoned grilled meat, mix all the spices in a small baking bowl. Sprinkle 2 teaspoons of salt over the pork, lamb and chicken and rub with the spices. Place the meat in a large oven dish, cover and refrigerate for one night.

Preheat the broiler. Broil the pork loin for 30-40 minutes, until the meat thermometer reads 65 degrees at the core. Grill the chicken breasts for about 12 minutes, until cooked through, turning once to the other side.

Grill the lamb chops until rare-pink, about 7 minutes, turning once to the other side. Remove meat and chicken from broiler.

Cut the pork loin diagonally into 1-inch-thick slices. Place one chicken breast half, one lamb chop and 2 slices of pork loin on each plate and bring the seasoned grilled meat to the table.
