A simple but delicious cake recipe:

(*) Tunisian style date cake.

(**) For a cake pan (quiche pan) of 0, 8 l capacity.

Marianne Kaltenbach: There are date cakes in North Africa in many variations. I owe this recipe to several women who live there.

Beat the yolks with the sugar to a whitish cream.

Add the juice of one lemon and the grated zest to the yolks form. Chop the dates and add them with the nuts. Moisten with the rose water.

Whip the egg whites until they are velvety and glossy and fold them in precisely.

Brush the cake pan (quiche pan) with the butter and sprinkle with the flour or just spread with parchment paper. Pour in the quantity.

Bake for twenty minutes at 180 degrees. Check with a pin if the cake is baked through. There should be no dough stuck to it. If the surface of the cake browns too quickly, cover loosely with aluminum foil.

For the glaze, melt the chocolate in a water bath. Stir through with the powdered sugar. Place the cooled cake on a foil or plate and pour the glaze over it.

Tip: It is best to use an untreated lemon. Otherwise, rinse the fruit well with hot water and dry.
