Mix flour and salt in a large baking bowl. Add the yeast mixed with a little buttermilk-milk mixture and the butter, then the remaining buttermilk-milk mixture. Mix together with a wooden ladle to form a wet dough.

On a floured surface, knead the mixture into an elastic dough in about 10 minutes. Stretch the dough with the heels of your hands and then roll it over. Of course, this is much easier to do with a food processor! Let the dough rise at room temperature with the lid closed until doubled in volume. This takes a good hour.

Then shape the dough into any loaf, score it with a kitchen knife (or scissors) and let it rise on the baking tray one more time.

Preheat the oven to 220 °C and place a heat-resistant container filled with water on the bottom of the oven. Put the loaves in the oven for 20 min, then reduce the temperature to 180 °C and finish baking in another half an hour.
