Instructions:

For the Rothschild soufflé, first heat the butter.

Then stir in the flour and slowly add the milk little by little until you have a uniform mixture. Bring to the boil briefly and remove from the heat.

Stir in the vanilla, sugar and yolks, then add the fruit soaked in golden water. Beat the egg whites until stiff and fold in carefully.

Grease and sugar the ramekins, pour in the mixture, place in the oven and bake for about 25 minutes at 200°.

Serve the Rothschild soufflé immediately.
