For the Special Rice Cake, mix well the flour with baking powder and salt. Beat the eggs until they are light and creamy. Gradually add sugar, continuing to beat for about 5 minutes. Then alternately add flour and coconut milk and mix well.

Butter two 20 cm baking pans or line them with baking paper and spread the dough in them. Bake in the preheated oven at 175°C for about 15 minutes. Now sprinkle the cheese on top and bake for another 10-15 minutes.

Remove the rice cake and drizzle with melted butter. Sprinkle with sugar or coconut flakes as desired.
