Instructions:

For the speculaas orange cake, preheat the oven to 200°. Grease the bottom of the pan well with butter.

For the dough, beat eggs and 250 g sugar in a mixing bowl with the whisk of a hand mixer until thick and creamy. Add oil and 200 ml orange juice while stirring.

Mix flour, cocoa powder, speculaas spice and baking powder and stir in. Pour the batter into the baking pan.

Bake in the oven (bottom) for 45 – 50 minutes. Then remove cake and let cool completely on a cooling rack for about 4 hours.

Hollow out the cake with a spoon to a depth of about 2 cm, leaving a border of about 2 cm. Coarsely crumble the hollowed cake mixture.

Mix 900 ml orange juice, 4 tablespoons sugar and pudding powder and prepare a pudding according to package instructions. Immediately pour the pudding into the hollowed-out cake and let it set in the refrigerator in about 3 hours.

Cover the cake with a cake ring. Whip the cream, vanilla sugar and cream stiffener until stiff. Mix in chocolate shavings. First spread the whipped cream, then the cake crumbs thickly on the Spekulatius orange cake.
