For the oven vegetables, crush the coriander in a mortar. Then mix the coriander with 3 tablespoons of olive oil and 1 teaspoon of salt.
Spread this mixture on the potatoes and pumpkin wedges, bake at 200 degrees in a preheated oven for about 20 minutes until soft.
Scald the tomatoes with boiling water, peel, seed and chop. Mix a marinade with 1 tablespoon lemon juice and 1 tablespoon olive oil, salt and pepper.
Finely chop the parsley and mix everything with the tomato cubes. Serve together.

Sprinkle the oven vegetables with rosemary. The vegetables can be varied according to season and taste.
