For the spicy stuffed cucumbers, first hard boil the eggs. Wash the cucumbers, cut in half lengthwise, hollow out and lightly salt.
Finely dice extra sausage, pickles and the hard-boiled eggs, mix with sour cream and season with salt, pepper and parsley. Cut the cucumber into pieces about 4 cm long and cover with the filling berg-like.
Garnish with a lettuce leaf and tomato wedges.

Spicy stuffed cucumbers can be prepared with any filling to taste. Good also to use up leftovers.
