For the spinach-potato strudel, steam or boil the potatoes until they are firm to the bite. Then let cool, peel and cut into coarse pieces. In the meantime, preheat the oven to 190 degrees.

Now boil the spinach according to package instructions and season with salt and pressed garlic clove. Mix the potato pieces with the spinach and let everything cool down a bit.

Roll up the puff pastry and cover it evenly with the ham. Put the potato and spinach mixture on top and roll it up into a strudel. Beat the egg in a bowl and brush the strudel with a little egg so that it shines nicely after the baking time.

Bake until the strudel is nicely browned. Approx. 25-30 minutes.

Preparation Tip:

The ham in the spinach and potato strudel can be well replaced with another type of sausage, such as salami or bacon.
