Instructions:

For the spinach lasagna with ricotta, first sauté finely chopped onion together with the garlic in a pot. Then add the spinach and sauté until soft. Add the canned tomatoes, simmer for a few minutes, stir in the ricotta and season to taste.

For the bechamel sauce, melt the butter in a saucepan, whisk in the flour, add the milk and stir until a more solid mixture is formed. Finally, season to taste with salt, pepper and nutmeg.

In a baking dish, first cover the bottom with some filling, then alternate layers of lasagna sheets, filling and bechamel sauce. Finally, on the top layer sprinkle the grated cheese and put the spinach lasagna with ricotta in the oven at 180 degrees for about 30-40 minutes.
