For the St. John’s wafers, beat the egg whites with the sugar and vanilla sugar until foamy and finally carefully fold in the nuts. Fill the mixture into a piping bag and pipe onto a baking tray lined with baking paper.

Make grooves in the center with a teaspoon and bake at 180 °C for about 20 minutes. Finally, soften the chocolate and stir in the whipped cream.

Pipe the chocolate mixture onto the cooled mass in the grooves. When the chocolate has cooled, cut into pieces about 2.5 cm thick.

Preparation Tip:

The St. John's wafers can be made with grated almonds or with grated hazelnuts. Instead of the chocolate filling, vanilla cream is also possible. It is also a great way to use leftover egg whites.
