For the strawberries in puff pastry, lay out the finished pastry on a baking sheet lined with parchment paper and cut into equal-sized pieces with a knife. The size depends on how big you want each pocket to be.

Wash and dry the fruit and remove the greenery. Cut the strawberries into quarters and place them evenly on the center of each puff pastry piece.

Sprinkle with green pepper, orange zest and vanilla sugar.

Beat and separate the egg. Brush the edges of the dough pieces with egg white, form a packet each and press the edges well.Brush the packets with egg yolk – pierce two very small air holes and bake in the oven for 15 minutes at 220 degrees.

In the meantime, mix mascarpone with sugar, lemon and whipped cream to a liquid-creamy mass.

When the baking time is over, spread or pipe the cream as a mirror onto a plate and place a strawberry puff pastry bag on top of each.
