The Toggenburg almond fish is a traditional speciality that can probably be found in most villages of the Toggenburg. It is not clear how this almond fish came about in detail. What is certain is that it has been offered for a very long time. Even today, a few Toggenburg confectioners have exceptionally beautiful copper molds, which have long been unavailable on the market.

Almond fish are made with a homemade special “fish dough”, each confectioner probably has his own recipe. The main component of the fuelling is usually raw, unpeeled almond kernels, thus creating a rather dark filling. In one or another confectioner, the filling is light, then you know that shelled almond kernels are in the fish.
