For the brown bread, mix all ingredients to a firm dough (best with a food processor). Then cover the dough and let it rise well (about 1 hour).

Knead the dough again. Shape into a roll and let rise covered in a proofing basket again for about 1 hour. Then heat the oven to about 220 °C.

Put a small cup of water in the oven and then add the brown bread dough. After 10 minutes, switch back to 200 °C. The bread will then take about 30 minutes to finish baking.

Let the brown bread cool down a bit and enjoy it fresh right away!

Preparation Tip:

The brown bread can also be baked without caraway seeds.
