Cut the cold butter into small pieces and knead with powdered sugar.

Cut the vanilla pod lengthwise and scrape out the pulp.

Mix the grated almonds and the flour and add the vanilla pulp. Quickly knead everything together with the butter-sugar mixture to form a dough.

Let the vanilla crescent dough rest in the refrigerator for 30 minutes.

Then divide the dough into several larger pieces and roll each of them into finger-thick strands. Cut the individual strands into small pieces and shape them into small crescents.

Place on a baking tray covered with baking paper and bake in an oven preheated to 180 °C for approx. 12 minutes.

Carefully roll the still warm vanilla crescents in vanilla sugar or sprinkle with vanilla sugar.

Preparation Tip:

Leave the vanilla crescents in a well-sealed tin for about 2-3 days. This will make them much more aromatic and crumbly. The patience is worth it!
