For the vegetable muffins, sift the flour and baking powder into a bowl. Add the salt and baking soda.

Beat the egg separately and mix with the olive oil, sour cream and buttermilk.

Add the mixture to the flour and mix until smooth. Season to taste with salt and pepper. Add the vegetables and knead everything in.

Pour the dough mixture into muffin tins.

Bake the muffins in the Philips Airfryer at 140 °C for about 10-15 minutes (depending on the size of the muffin cups).

Finally, increase the heat to 180 °C, brush the vegetable muffins with a little olive oil and bake until golden brown.
