For the Vegetable Pasta & Pike-Perch, cut the pike-perch into 4 pieces, lightly plate, wrap in the prosciutto and set aside for frying. Briefly boil vegetable strips in salted water, rinse in cold water and drain.

Cook pasta in salted water until al dente and drain. Quickly fry fish in oil on both sides in a coated pan until crispy. Mix noodles, vegetable strips and cream, season with salt and pepper, heat up and spread the vegetable noodles & pike perch on preheated plates. Arrange fish on top. Finish with pesto.

For the pesto, mix all ingredients to a creamy paste (food processor) and season to taste.

Preparation Tip:

This wholesome lunch is complemented with a large portion of salad. Instead of coffee cream, you can also use soy yogurt.
