The cored, peeled apples are cut in half diagonally and boiled once in white wine. The apple halves should be soft, but not fall apart. Arrange these apple halves 2 per person on a warm plate and top with the hemisphere of ham rice.

For the ham rice, toss the cooked long-grain rice in butter until hot, season with a little saffron and mix with the ham cubes.
