Pasta dishes are always delicious!

Remove the meat from the refrigerator about thirty minutes before frying.

Preheat kitchen stove to 60 °C, preheat plates and dishes.

Heat clarified butter with thyme in a coated pan. Roast apple slices in batches until golden brown, keep warm.

Clean pan with kitchen roll. Heat clarified butter in the same pan. Brown meat in batches on both sides for about one minute each, turning to the other side only when a crust has formed.

Reduce temperature, finish roasting on both sides for about 1 1/2 min each (a point), season, keep warm.

Dab up roasting fat with kitchen roll.

Sauce: bring red wine and stock to a boil in the same roasting pan, release drippings, boil until reduced by half. Reduce temperature. Add jelly, simmer on low heat for about ten minutes until sauce is thick, season.

Arrange the meat with the apple slices on the warm plates, spread a little sauce evenly on it, add the rest of the sauce to the table.

Tip: use cutlets instead of entrecotes, the frying time is extended by approx. 1 min per side.

Serve with: spaetzli, noodles.
